Eggplant Omelet For Lunch Or Dinner



Let's all get veggies today. All meat not good at all. You might want to try this recipe. Eggplant Omelet or Tortang Talong is another yummy Filipino dish. This is easy and quick that you can enjoy for lunch or dinner.

The eggplant is grilled, soaked in beaten eggs and then fried and you can dip it with Vinegar or for some they enjoyed it with Ketchup when served.

Note: Eggplants are low in fat and calories which make them very suitable for your diet plans.

Ingredients:

6 pieces Chinese eggplant
3 pieces raw eggs
4 tbsp cooking oil
Salt and Pepper to Taste

Cooking Procedure:

First, grill the eggplant until the color of skin turns almost black.

Then let the eggplant cool and peel off the skin and set aside.

Place the egg in a bowl, add salt and pepper to taste and mix together.

Place the eggplant on a flat surface and flatten using a fork.

Then dip the flattened eggplant in the beaten egg mixture (with salt and pepper)

Heat the pan and pour the cooking oil and fry the eggplant that was dipped in the egg mixture.

Just makes sure that both sides are cooked. It will take 2 to 3 minutes per side over medium heat to cooked it.

Served with Rice and Dip with Vinegar or Ketchup.
