Pancit Palabok Snack For Long Life




I had pancit palabok for snack, just bought it and took it home to eat. I also like pancit guisado but this pancit palabok or pancit luglug tasted really good, (noodle dish) and the price is What is reasonable enough.

Pancit is term for noodles. Pancit Palabok is a favorite noodle dish in Filipino cuisine and usually served as snack or during special occasion especially birthdays, ( It is believe to noodles represent long life and good health) and probably true but I think it is because it taste good and it is almost every Filipino favorite. 

Note: Pancit palabok and pancit luglug are almost the same dish, the difference is the noodles used. Luglug uses a thicker noodle than the traditional bihon which is use for pancit palabok or pancit guisado.

Ingredients:

400g rice noodles (Bihon)
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1/2 tbsp atchuete (annatto) powder
1kg small cooked prawns
1kg minced pork
2 cans cream of chicken soup
3 1/4 cups chicken broth
Crushed Pork Rind Cracklings (chicharon)
salt and pepper to taste

Optional garnish but better if you have them:

2 spring onions, chopped
4 hard boiled eggs, crumbled
Fried garlic
Fish Sauce to taste

Procedure:

Boil some water in a large pot and cook noodles (Bihon) until tender, drain and set aside.

Put oil in frying pan over medium heat and saute onion and garlic. Set aside half of this mixture for the sauce.

Then stir in the atchuete powder to have deep red orange color. Add the prawns and simmer for 3 minutes and set it aside.

Brown the minced pork in a large pot. Then add the remaining half of the onion, garlic mixture and salt and pepper to taste.

Then add the cream of chicken soup, stir and mixed well. Add the chicken broth, stir until the it becomes a thick sauce. Then set it aside.

Finally to serve it, place portion of the noodle on a plate, then put portion of the sauce on top of noodle and springkle on top some prawn.

Then Garnish with spring onions, egg, chicharon (crushed pork rinds) and fried garlic

Best Serve with Bread. Enjoy and Happy Bubbling
