ArrozCaldo (Filipino Congee)




Wow, it is colder today than yesterday and when it is cold like this what comes to mind, something that will warm you up...coffee maybe but maybe better to have is ArrozCaldo.

Arroz Caldo is a popular Filipino Congee. It is really good during cold weather. So for those we wants to be warm and full, I list down on how to prepare the yummy Arroz Caldo.

Ingredients

1 kg chicken pieces, skin removed
1 tsp garlic powder
¼ tsp pepper
2 tbsp olive oil
1 thumb-size ginger, cut into strips
1 onion chopped
1 tbsp fish sauce or salt
1 1/2 cups uncooked rice, washed and drained
7 cups water
4 hard boiled eggs
Chopped green onions

Season chicken pieces with garlic powder, salt and pepper. Let sit for 30 minutes.

Heat olive oil in a big pan with lid. Sauté ginger and onions until soft and clear.

Add chicken pieces, stir and cook for 5 minutes or until meat is no longer pink.

Add fish sauce, rice and saffron, if using; stir to combine flavors.

then add water stir to mix ingredients. Let it boil, lower the heat, cover and simmer for 20 minutes or until chicken is tender.

Add hard boiled eggs. Seasonings with fish sauce or salt to taste.

Serve with chopped green onions and lemon or calamansi wedges.

Best Serve when hot!
