Seeded Breadfruit in Coconut Milk

                          

Seeded Breadfruit or Kamansi is related to Jackfruit. Both have sharp points on its skin. And one of the delicious dish you can cook with this is the Seeded Breadfruit in Coconut Milk. This is best with fried fish
marinated in vinegar and garlic or even just the salty dried fish.

This is a simple and quick to cook dish but for sure it will satisfy your taste and you might want more.

Ginataang Kamansi or Seeded Breadfruit in Coconut Milk 

Ingredients:

3 cups thick coconut milk

5 cups thin coconut milk ( Or you can use instant coconut milk in can or sachet)

1 Whole of Seeded Breadfruit, peeled and cut into bite size pieces
1/4 pork belly, cubed
1 medium onion,chopped
4 cloves garlic minced
3 tbsp oil
4 pcs. bird’s eye chili, cut into pieces
   fish sauce,salt and pepper to taste


 
Procedure:

You need to extract thick coconut milk by combining 2 cups of warm water with grated coconut and squeezing the juice from it. Then Set Aside.

Then Extract thin coconut milk (from same grated coconut) 5 cups of warm water and then set aside.

Heat oil in a pot and sauté garlic and onions until onions become transluscent.

Then add pork and fry in together with the garlic and onion until it’s golden brown.

Pour in the thin coconut milk and the breadfruit pieces. Stir

Simmer until breadfruit is tender and the sauce a little dry.

Then add the thick coconut milk and fish sauce.

Simmer until the sauce has become oily and the coconut milk has curdled a bit.

Add salt and pepper to taste and the chili.

Best Served with Rice and Fried Fish, Enjoy!
