Navy Bean Soup To Keep Your Warm

                           

Here is another soup recipe that I would like to share with you. I have tried this once, way back in high school. This is perfect for rainy and cold weather. It will make you full and warm you up.

Ingredients:

2cup dried navy beans
1 cup salt pork,dice medium
1 onion diced
1/2 stalk celery diced
1/2 tsp oregano
1 bay leaf
1 large carrot, pared and diced large
salt and pepper to taste


Place the beans in large bowl and cover with hot water, soak for 2 hours

Then place salt pork in large saucepan over medium heat. Cook it for 3 minutes. Then you add onions and celery, cook 4 to 5 minutes over low heat.

After 2 hours, Drain beans and add to onion in saucepan. Add seasonings to taste

Put enough cold water to cover beans and let it boil. Cook it for 1 and 1/2 hours, partly covered , medium heat. Stir occasionally. 

Then add diced carrots and taste to correct seasoning. Continue cook for another 30 to 45 minutes and keep stirring occasionally.

Best Serve When Hot and With Bread!
