Nilagang Baboy or Pork Stew
This is another simple dish and this is what we had for lunch. I did not get it perfectly but after adding more seasoning, it did taste good after all. A little bit of everything.
1/2 Kilo pork either ribs or any bony parts of pork. Cut into pieces
8 cups water
1 onion, sliced
1/4 tsp. peppercorn
1 piece pork broth cubes
3 potatoes, quartered
1 medium cabbage leaves(repolyo) or bundle of Pechay. Cut into serving pieces
1 bundle green beans(optional)
Salt to taste
Optional:
You may also add Japanese corn, cut into pieces.
Cardava banana (saging na saba), cut into pieces
Procedure:
Place meat on a large casserole and add water. Boil over medium heat and let it simmer until meat is tender. Remove the scum as it rises.
Then add onion, peppercorn, pork broth cubes and sprinkle some salt to taste.
Add potatoes and continue cooking until potatoes are cooked.
Add the green beans. Let it simmer for 5 minutes.
Adjust seasoning according to taste
Add cabbage leaves (or petchay) but remove from heat and leave it with cover for about 3 minutes, as we do not want to overcook the green vegetables.
Serve hot with Steamed Rice and Enjoy!
