My Best Friend Forever





How was your weekend EveryOne? Mine was good and peaceful, I had good sleep and relaxing one. 

However, I am missing my bestfriend so much, we used to do so many things together, visit churches during holy week and bonding to the max like there is no tomorrow. Just so much fun with her, she laugh at my silly jokes and we understand each other so well. We call each other Bru, meaning Witch but a good witch okey and our sign of endearment i guess.

I was watching tv with my niece and it came to the part where this ladies were talking and they were like BFF or Best Friend Forever and my niece asked me out of the blue, "Auntie who is your BFF and I replied, I have so many and she said No, it should be just one" and that made me think....And I realize I have so many friends but never been that close to anyone, as close as I've been to Bru....she was my BFF and I still get teary eye when I think about our time together, especially when things are really tough for me...We could open up and talk about anything under the sun, work, relationship...or just about anything silly. I just missed her so much, and loosing her is one of the most painful truth that i have to faced and I know I will never find someone like her in this Lifetime.

It is always true, that we should always cherised every moment spend with our loved ones, learn how to appreciate, give all the love that you can and while you can, make them feel and show them you will be there for them, learn to listen.

Just my thoughts for today and came back flowing from nowhere that made me think of her and I really appreciate her friendship and I know she is resting in heave with God.

Just part of my reflection and realizing things!

Life really has its Up and Down but what matters is how well we handled things along the way!

Feeling That You Wanted To Go....

This is a title from an old song that really rings true, sang by Jimmy Durante, an american singer, comedian, pianist and actor. 

For me it is that feeling like being trap into something that you want to let go but still you cant. I think this could be the hardest ever.... most probably happens in a relationship or work.

I know i felt that feeling before and sometimes I still feel that from time to time and it sure is not a happy feelings at all. Oh yes i think  i have, in work and a relationship, like getting burn or something,haha..its just a feeling, hard to explain.

I cant put it in few words or even in few paragraphs, but its like doing what you dont want to do anymore or being in a relationship that you think or you feel your no longer happy....that kind of feeling!

I think this is a quote that made into a song and it is a good one.

Grilled Squid For Summer



We are still on SeaFood and let's grill some squid for a change. No frying, no oil, no grease.

This is also perfect for this time of year, staying away from meat while enjoying what we eat.

I am going to share a combination of both, from google search and from our kitchen recipe. Spicy It Up With Little Of Everything!

Ingredients:

3 piece large Squid
2 cup soy sauce
3 medium sized tomato, diced
3 medium sized Spanish onion, diced
6 pieces dried Thai chili 
6 pieces calamansi or lemon 
Salt and Pepper to taste

Cooking Procedure:

Combine onion and tomato in a large container. Then add some salt and pepper and mix it well.

And then stuff the squid with the mixed vegetables and seasonings.

Grill the squid for 6 minutes or until both sides are cooked.

Mix calamansi, Chili and Soy Sauce for Dip.

Serve Hot With Dip and Enjoy!

Sweet and Sour Sauce Breaded Shrimp





Here is another mouth watering dish that you will surely enjoy with your family.

I have done this once but I needed to check on Google how to make the sauce, more simple but yummier.

Easy and Quick to Prepare.

Ingredients:

1 kilo medium shrimp, peeled
3 eggs, beaten
3/4 cups bread crumbs
1/2 cup flour
2 cups vegetable oil
Salt and Pepper To Taste

Cooking Procedure:

Sprinkle salt and pepper on the shrimp and let it stand for about 10 to 15 minutes.

Then dredge the shrimp in flour and then dip in the beaten eggs. Quickly roll the shrimp over the breadcrumbs. Make sure that the shrimp are properly coated.

Next is heat the oil in a deep pan.

Then deep fry until the color turns golden brown.

Put it in a plate with paper towel, to absorb the oil. Then move it to a serving plate.

Sweet and Sour Ingredients:

4 tablespoons brown sugar
3 tablespoons tomato ketchup
1/3 cup rice vinegar or white vinegar
1/2 teaspoon soy sauce
3 teaspoon cornstarch, dissolved in 6 teaspoons of water

Procedure:

Combine the sugar, ketchup, vinegar, and soy sauce in a bowl. Then mix the combined ingredients

Heat the saucepan then pour all the combined ingredients ( ketchup, vinegar, soy sauce). Stir once in a while and let it boil.

Then pour in the diluted cornstarch and continue stirring until the texture becomes thick.

Finally transfer the sweet and sour sauce to a sauce bowl.

Serve The Breaded Shrimp with Sweet and Sour Sauce and Enjoy!

Eggplant Omelet For Lunch Or Dinner



Let's all get veggies today. All meat not good at all. You might want to try this recipe. Eggplant Omelet or Tortang Talong is another yummy Filipino dish. This is easy and quick that you can enjoy for lunch or dinner.

The eggplant is grilled, soaked in beaten eggs and then fried and you can dip it with Vinegar or for some they enjoyed it with Ketchup when served.

Note: Eggplants are low in fat and calories which make them very suitable for your diet plans.

You can check out the ingredients and procedure below to try and have a delicious Eggplant Omelet or Tortang Talong.

Ingredients:

6 pieces Chinese eggplant
3 pieces raw eggs
4 tbsp cooking oil
Salt and Pepper to Taste

Cooking Procedure:

First, grill the eggplant until the color of skin turns almost black.

Then let the eggplant cool and peel off the skin and set aside.

Place the egg in a bowl, add salt and pepper to taste and mix together.

Place the eggplant on a flat surface and flatten using a fork.

Then dip the flattened eggplant in the beaten egg mixture (with salt and pepper)

Heat the pan and pour the cooking oil and fry the eggplant that was dipped in the egg mixture.

Just makes sure that both sides are cooked. It will take 2 to 3 minutes per side over medium heat to cooked it.

Served with Rice and Dip with Vinegar or Ketchup.

Delicious Crabs In Coconut Milk




Let's go for Seafood and Seafood cooked in coconut milk is very common in Filipino Cuisine which goes perfectly when eating rice, just be careful if you are watching your sugar or if you are diabetic because it might require you to have more rice.

However, Crab is packed with nutrients but low in calories and an excellent addition to your healthy eating plan. It is also a good source of vit A, B and C and more.

Try this mouth watering recipe for your next meal, enjoy and share it!

See the cooking procedure below and how it is done. I also googled it and double check some of the information, it is best to do it our way but it is also good idea to check out other recipes and improved or learn more from them.

Ingredients:

2 Kilo blue crabs (Alimasag) whole or cut each in half
3 tbsp shrimp paste
1 tbsp fish sauce or to taste
2 tsp garlic, minced
1 medium-sized onion, minced
1 knob ginger, cut into thin strips
4 tbsp cooking oil
5 cups coconut milk
½ tsp ground black pepper
1 bunch fresh spinach
8 pieces Thai chili

Cooking Procedure:

Saute garlic, onion and ginger in a large pot.

Then add the ground black pepper and coconut milk then bring to a boil

Add the shrimp paste and fish sauce and let it cook until coconut milk’s thick and natural oil comes out of it 

Add the Thai chili and simmer for 3 to 5 minutes

Put the crabs in the pot and mix until evenly covered with coconut milk. 

Let is simmer for 5 to 20 minutes or until cooked.

Finally, add the spinach and simmer for another 5 minutes

Serve hot. Share and Enjoy!

Serve Hot and With Rice, Enjoy Your Meal!

Congratulations Dear Graduates!




It is not just holidays that we are looking forward but Graduation Day as well, especially for Parents...Oh for sure the students are having this mix emotions of being happy and partly sad, because they know they are going to missed being with their fellow students. But mostly a happy feelings that they did it with flying colors and they are on their way in fulfilling their dreams.

Looking back (long time ago and once upon a time,lols)I remember how we were  all looking forward on our graduation day and we wanted it to happen so soon but when it was close and it came, we felt the sadness and unexplained feelings and we knew we were going to missed that part of our lives, it different ways..It is always fun, especially our high school days. But that is a much different and long story,wink.

Oops lets go back, its kinda busy today. Graduation everywhere or preperation for some. They are all looking so excited and some are not even sure whats next. Oh well what matters most is what is today, It Is their Graduation Day, most awaited moment for every Students, Teachers and Parents.

I wish you all students a brigh future ahead of you and dont forget to look back and always keep your feet on the ground...Have fun but get serious sometimes or when you have too....Another chapter, another page is about to open, God Bless!

New Pope: Cardinal Bergoglio of Argentina






“Habemus papam!,” the crowd shouted in Latin, waving their umbrellas. “We have a pope!”

After the long wait, White Smoke Coming Out From The Chimney Of Vatican's Sistine Chapel, this is  a signal that the Cardinals has elected a new Pope To replace  Pope Benedict XVI.

The New Pope is the 76-year-old Cardinal Jorge Mario Bergoglio of Buenos Aires, Argentina.  He will be called Pope Francis. Pope Francis is the first Pope from Latin American and was born in December 17, 1936.

The moment we've all been waiting for has come, a new Pope has been elected and everybody is shouting and waiting for him to come out.

People are waiting for the name of the new Pope,  the 266th pontiff of the Roman Catholic Church and it is a tradition that the name would not be revealed until he appeared on a balcony  of St. Peter’s Basilica.

Finally we have a new Pope, God Bless The World and God Bless The Pope!
