Bibingkinitan For Snack

                                        

Freshly Baked Mini Bibingka!


Today when we went to the mall, I came across this yummy bibingkinitan (mini bibinka, a type of rice cake from the Philippines).

Bibingka is one of favorite native delicacies in the Philippines.It is made with rice flour and coconut milk and water.

Bibingka is a traditional Christmas food in the Philippines. You will see vendors selling it outside of churches during christmas time, after every midnight mass. Bibingka is usually eaten along with Puto Bumbong (filipino native snack made from sticky rice) and hot chocolate.

So after the holiday, you will not see bibingka anymore or you will but only on selected and very few places. So if you are craving for bibingka, you wont get it right away.

However, It is good that we can actually purchase them at the mall now. They have this small stall and they are selling Bibingkinitan or mini bibingka, just size of ladies palm). They sure taste good and very convenient place to buy them. It is only P20 per piece, which is reasonable enough and believe me they taste yummier than yummy,lols.

So next time you are at the mall, try them and you might actually like how they taste and you might end up buying few more to take home.

Bill Porter: Door To Door


                                     

I just watched this very inspiring movie about a guy who has celebral palsy and yet he never gave up and his determination and patience is so inspiring. There is "NO OBSTACLES" if you really want to go for it.

His name is Bill Porter, he is a door to door sales man. And his achievement is so amazing. He sells his goods to residents of the West Hills area of Portland, Oregon daily and even there are some rejections, he never gave up and he kept on trying.

Senator John Glenn presented Bill Porter with the National Council on Communicative Disorder Award on September 9, 1998 at the Kennedy Center in Washington DC.

Another part of the story that is really touching is how his Mother believes in him and how he has encourage him to deal with life with patience and persistent and the loved she has showned is really unconditional. 

And his friend and associate Shelly Brady, who was always there for him and never left, no matter what.

I dont always watched true to life movies, most are fictional, my favorites are always romance, comedy, horror but this one has really caught my attention, although it is a almost 2 hours movie, still when you watch it....it will make you think to never stop trying and that life has so much to offer, if we just keep on trying!

Appetizing Chicken Feet Adobo

                              

Here is another Delicious and Appetizing Dish. This is one of the Filipino favorite Appetizers. You will see this during Pinoy drinking sessions or gatherings. This Pulutan or Appetizers eaten when someone is drinking liquor. We call it Adobong Paa Ng Manok (Chicken Feet Adobo) or Adidas.

Some might find it yucky but for some this is a yummy exotic food in the Philippines.

Although it can be fried, boiled, stewed, grilled or steamed but one of the best recipe to cook it with would be Adobo. Adobo is Philippine's National and Favorite Dish.

Ok let us proceed to the cooking ingredients and procedure on it is cooked.

I have tried eating this once and yes it tasted good, I actually liked it, although I just tasted It because I dont drink at all.And not considering to eat it with rice, although some would.

Last night, my brother cooked it so they can used it as their Pulutan and I took pictures and I told them I will post it here.

Adobong Paa Ng Manok (Chicken Feet Adobo)

1 kilo chicken feet
4 heads garlic, peeled and chopped
1 large onion, peeled and quartered
1/2 cup soy sauce
1 cup water
1 tbsp. black pepper
1/4 cup vinegar
3 pieces bay leaves (laurel)
salt to taste

optional: red chili peppers (minced)

You have to wash chicken feet thoroughly and drain.

Clean and Rub chicken feet with salt and chop off nails.

Wash again with running water. Drain.

Put chicken feet, garlic, onion,soy sauce, pepper, water, sugar and bay leaves in a pot, mix everything together. Boil it using medium heat.

Let it simmer for 30-40 minutes or until chicken feet are cooked and tender.

Season with salt and vinegar. Add more water if needed.

Finally add red chili peppers and cook until sauce thickens.

Serve as a finger food, Appetizer or serve with rice as a main dish.

Let's Talk About Philippines Cockfighting




Ok just for a change, lets talk about cockfighting. After seeing the photo from an old file. I thought of checking on it on Google about it and I landed on Wikipedia for more information. Cockfight is almost global. There are many countries that actually have cockfighting and looking at the photos, It looks like a lot of fun but it involves betting.

Cockfight, this is a blood sport between two roosters or commonly called gamecocks. This gamecocks is being held in a cockpit arena ring.

Upon checking on Google, I read that there is cockfighting in some other countries and not just in the Philippines. But let me just focus in the Philippines cockfight.

The Philippines has hosted many World Slasher Cup derbies already, which they held twice a year in Araneta Coliseum. The world's leading game breeder meet up twice a year on this said event.

In the Philippines, cockfighting is called Sabong. And there are legal and illegal cockfights. I often see cockfights in the provinces. The legal cockfight is being held at the cockpit ring every week, where they could bet. However, the illegal cockfights which is called tupada or tigbakay is being held on a more private place, to make sure no authorities would come and just raid the place.

On both events of the cockfights, gaffs of knives are used and they put it on the roosters before the game begin. There are two kind of knives that can and are being used in the Philippines cockfighting and this are the single edge blade and double edged blades use for derbies.

You will see the knives are attached on the left leg of the rooster (cock),but there are times the blades can be attached on right or both legs this all depend on the agreement between the owner of the roosters.

This is being judge by a referee they call "sentensyador or koyme". His verdict is always final and you cant ask for an appeal.

Gamecocks or Cockfighting was first introduce in the Philippines during the colonial rule in the island by the Spanish authorities.

I believe this is usually being held during sunday and the photo shown above are from the province. Most provinces have sabong (cockfight during weekend).

Navy Bean Soup To Keep Your Warm

                           

Here is another soup recipe that I would like to share with you. I have tried this once, way back in high school. This is perfect for rainy and cold weather. It will make you full and warm you up.

Ingredients:

2cup dried navy beans
1 cup salt pork,dice medium
1 onion diced
1/2 stalk celery diced
1/2 tsp oregano
1 bay leaf
1 large carrot, pared and diced large
salt and pepper to taste


Place the beans in large bowl and cover with hot water, soak for 2 hours

Then place salt pork in large saucepan over medium heat. Cook it for 3 minutes. Then you add onions and celery, cook 4 to 5 minutes over low heat.

After 2 hours, Drain beans and add to onion in saucepan. Add seasonings to taste

Put enough cold water to cover beans and let it boil. Cook it for 1 and 1/2 hours, partly covered , medium heat. Stir occasionally. 

Then add diced carrots and taste to correct seasoning. Continue cook for another 30 to 45 minutes and keep stirring occasionally.

Best Serve When Hot and With Bread!

Soup Of The Day: Cream Of Green Onion Soup

                      

It is always good to try something else everyday. You can do same thing but add a little bit of spice in everything that you do, spice it up and enjoy your onion soup. 

Here is another soup recipe for those who loves onion. Easy and quick to prepare. Something different for you to taste.

Ingredients:

3 tbsp butter
12 medium green onion chopped
3 tbsp flour
5 cups chicken stock, heated
3 large potatoes,peeled and sliced
1/2 tsp thyme
1 tsp basil
1 tbsp chopped fresh parsley 
salt and pepper

Procedure:

Melt butter in a saucepan, over medium heat. 

Then add green onions and cook for 5 minutes, over low heat

You can then mix in flour and cook for another 2 minutes.

Add in the chicken stock. Next add potatoes and seasoning to taste. Cook for 25 to 30 minutes over medium low heat, stir it occasionally.

Then remove from heat and put soup in a bowl and sprinkle with parsley. Best Serve when hot and with bread!

Nilagang Baboy or Pork Stew

                  
This is another simple dish and this is what we had for lunch. I did not get it perfectly but after adding more seasoning, it did taste good after all. A little bit of everything.

1/2 Kilo pork either ribs or any bony parts of pork. Cut into pieces
8 cups water
1 onion, sliced
1/4 tsp. peppercorn
1 piece pork broth cubes
3 potatoes, quartered
1 medium cabbage leaves(repolyo) or bundle of Pechay. Cut into serving pieces
1 bundle green beans(optional)
Salt to taste

Optional: 
You may also add Japanese corn, cut into pieces.
Cardava banana (saging na saba), cut into pieces

Procedure:

Place meat on a large casserole and add water. Boil over medium heat and let it simmer until meat is tender. Remove the scum as it rises.

Then add onion, peppercorn, pork broth cubes and sprinkle some salt to taste.

Add potatoes and continue cooking until potatoes are cooked.

Add the green beans. Let it simmer for 5 minutes.

Adjust seasoning according to taste

Add cabbage leaves (or petchay) but remove from heat and leave it with cover for about 3 minutes, as we do not want to overcook the green vegetables.

Serve hot with Steamed Rice and Enjoy!

Everytime I hear this song, it always stop me to think and reflect on things. Very inspiring and very touching as well. I always listen to this one from time to time, and i think it is one of the best song i ever heard.

It is always good to reflect on things, learn from them and then move on.

Restaurants Ban Customers From Taking Food Pics?

It has been a habit for more people to take pictures of food they eat using instagram, which is awesome for other but very annoying for some.

I am also guilty as charge on this one. I like taking photos of food we eat or when I eat out with friends and some of them dont really appreciate it and you will kinda see it by the way they look at you. Like they want to eat you alive,lols. Oh well fine, I wont then....I wont take pictures while your looking!

They want to enjoy eating their meal without anyone bothering on taking pics before they put it in their mouth. And i think that is understandable why some restaurant in New York started banning customers from taking photos of their food. 

Reason is they want them to enjoy their meal because taking photos is really very distracting for some.

Here Comes The Taho Vendor (Bean Curd Vendor)




It is 6am here now and i can hear the taho guy calling out to sell his taho or bean curd.

Taho or Bean curd is a flavored product made from soybeans and also known as tofu, very similar to a very fine custard.

You will see the Taho vendor roaming around in the morning selling bean curd, which is considered street food and a common sight in the Philippines, especially in the early morning before the sun is up. You get to see it from street vendors that roam around early in the mornings but sometimes they also sell it in late afternoon.

The bean curd vendor (magtatahô)carries two large aluminum buckets that hang from each end of a yoke. The larger bucket has the tofu base and the smaller bucket has the arnibal (caramelized brown sugar) and sago (gummy pearl). The Sago "Pearl" you can actually buy from the local market.

It is best to eat it in the morning while it is hot, especially during cold weather. It is most kids favorite and you see kids chasing the taho vendor sometimes.

It has other flavor now, one I got the chance to taste is Strawberry Flavored Taho, which is actually good.

For those who have not tried it yet, you should try it and hopefully you will hear the taho vendor coming in the morning!

Oh well, I used to chase them too when I was younger but now it is time for the younger kids to do that. It is good and yummy, I especially love those Sago Pearl.

Not only good for breakfast but best for snack too!

But for now, I am good with my Coffee and maybe something else later!

Raindrops Keep Falling On My Head





The beat and lyrics of this song always put me to smile everytime i hear it. 

We all have this like nothing seems to work right, no matter what and how we try. So I stop and pause for awhile and think what is the best next move.

Coz it is when you are feeling down or not in mood that you might likely to make mistakes in decidng on things. So Ive learned to stop and think for awhile ( a year maybe,haha) before I decide. Just weigh things and see the pros and cons. On big matters that is.

Pancit Palabok Snack For Long Life




I had pancit palabok for snack, just bought it and took it home to eat. I also like pancit guisado but this pancit palabok or pancit luglug tasted really good, (noodle dish) and the price is What is reasonable enough.

Pancit is term for noodles. Pancit Palabok is a favorite noodle dish in Filipino cuisine and usually served as snack or during special occasion especially birthdays, ( It is believe to noodles represent long life and good health) and probably true but I think it is because it taste good and it is almost every Filipino favorite. 

Note: Pancit palabok and pancit luglug are almost the same dish, the difference is the noodles used. Luglug uses a thicker noodle than the traditional bihon which is use for pancit palabok or pancit guisado. 

You can buy Pancit Palabok and Pancit Luglug at Filipino potluck parties.


Ingredients:

400g rice noodles (Bihon)
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1/2 tbsp atchuete (annatto) powder
1kg small cooked prawns
1kg minced pork
2 cans cream of chicken soup
3 1/4 cups chicken broth
Crushed Pork Rind Cracklings (chicharon)
salt and pepper to taste

Optional garnish but better if you have them:

2 spring onions, chopped
4 hard boiled eggs, crumbled
Fried garlic
Fish Sauce to taste

Procedure:

Boil some water in a large pot and cook noodles (Bihon) until tender, drain and set aside.

Put oil in frying pan over medium heat and saute onion and garlic. Set aside half of this mixture for the sauce.

Then stir in the atchuete powder to have deep red orange color. Add the prawns and simmer for 3 minutes and set it aside.

Brown the minced pork in a large pot. Then add the remaining half of the onion, garlic mixture and salt and pepper to taste.

Then add the cream of chicken soup, stir and mixed well. Add the chicken broth, stir until the it becomes a thick sauce. Then set it aside.

Finally to serve it, place portion of the noodle on a plate, then put portion of the sauce on top of noodle and springkle on top some prawn.

Then Garnish with spring onions, egg, chicharon (crushed pork rinds) and fried garlic

Best Serve with Bread. Enjoy and Happy Bubbling

Sinigang Na Bangus (Milkfish In Sour Broth)



What I had last night is Sinigang na Bangus.

Now this is a very easy to do dish and yet very good especially during cold season. Affordable, Simple and Easy To Cook.

Sinigang is one of Filipinos most favorite food.

Sinigang na Bangus (Milkfish Stew)

Ingredients:

2 pcs.large bangus, cleaned and sliced into serving pieces
5 cups water
2 cups kangkong leaves ( water spinach-chinese kangkong)
1 small pack tamarind powder or fresh one
4 pcs. taro root (gabi) halved
3 Finger Chilli Pepper (Green)
salt and fish sauce to taste
2 pcs. Green Saging na Saba (Philippine Cooking Bananas) sliced

You can also add sliced of ginger, tomatoes,onion, egg plant,string beans, optional.

Note: You can also use either Pork, Beef or Shrimp, whatever your craving for to put on your sour soup.

Procedure:

Boil water in a casserole together Taro Root and Saging Saba for 5 minutes or until cooked. 

then add Milk Fish, Finger Chilli and let is simmer for 10 minutes.

Then add the tamarind powder (or fresh tamarind) and salt to taste ( fish sauce to taste optional) simmer for another 5 minutes.

Turn off heat, then add the kangkong leaves and let stand covered for 5 minutes.

Best Serve with Rice and Fried Fish.

Quick and Easy Sautéed Vegetables Recipe

                           

Good Day EveryOne!

I am going to share now a very easy recipe that you can prepare even if you are sleeping,haha joking. But it is really easy, just like that.

We are prepararing Sauté vegetable with fried fish on the side, as always. And I have list down the ingredients below.

Ingredients:

1 tbsp. cooking oil
2 cloves garlic, peeled and minced
1/4 kilo chicken liver
1/2 kilo cabbage,sliced into strips,removed core
2 small carrots, peeled and sliced thinly
1/2 cup water 
1 stalk of celery (slice into smaller pieces)
ground black pepper to taste
fish sauce to taste
salt to taste

Note: You can either use Pork, Shrimp or Chicken.

Procedure:

Place skillet over medium heat. Pour oil. Saute garlic until golden brown. Add chicken liver, stir-fry, about 5 minutes. Season with fish sauce, Then add carrots and celery, let it simmer.

Then add half cup of water and cabbage. Add ground pepper and salt to taste. Cook for 3 more minutes or until cabbage is half-cooked.

Let the remaining heat from the frying pan fully cooked the vegetables.

Best Serve when hot and with fried fish on the site, although not necessary.



                              

Green Mangoes With Bagoong


                                  

Today while i was out at the market place, something caught my attention that did excite my salivary glands,haha. I saw this sour unripe indian mangoes, so mouth watering that did really make me crave. Green Mangoes and Bagoong, yummmy...

So i bought 5 pcs. for 10 pesos each, not bad but you could actually buy them cheaper but maybe because no one else is selling them yet, so it was a bit over price, but thats okey, its all worth it.

So as soon i got home, i peeled them and put the bagoong out and ther it goes with the pictures. I sat there at ate 3 of them,haha. 

For some who have not tried Mango and Bagoong, you should when you get the chance. Bagoong is salty fermented shrimp paste and match that match with Green Mangoes.

Green Mangoes dipped with Bagoong (salty fermented shrimp paste) is one of Filipino favorite, which is almost the same that others find Pickles so appealing and mouth watery.

Hot Pork Sinigang (Sour Soup) On A Cold Weather!

                                     

Pork Sinigang or Sinigang na Baboy is a delicious sour soup. Not Only good for warm better but taste even during cold weather.

For cold weather, it is good to have soup for dinner but we need something that has everything in it. Meat and Vegetable to complete it. What I did tonight is cooked Pork Sinigang. My easy way of doing it and the less expensive way. However, If you want seafood on your sinigang, you can also use shrimp. Procedure is almost the same, but the cooking time is less.

It turns out good and everybody enjoyed it. With Rice and Fried Fish (optional).

I have list down how it was cooked and you could try it and I am sure you will enjoy. Have a Nutritious and Yummy Dinner In A budgeted way.
Ingredients:

1 1/2 liters water
2 lbs pork belly (or buto-buto)
1 bunch spinach (or kang-kong)
fish sauce to taste
3 pieces chili (or banana pepper)
3 pieces taro (gabi), quartered
1 pack sinigang mix (good for 1 1/2 liters water or use tamarind)

Optional: You may also add okra,eggplant,tomatoes,string beans (sitaw) 

Cooking Procedure:

Pour the water and bring to a boil

Add the taro and Pork then simmer for 30 minutes or until pork is tender

Put-in the sinigang mix and chili and mix with the ingredients

Add other vegetables if there are any and simmer for 5 to 8 minutes and a drop of fish sauce to taste.

Put-in the spinach (kangkong), turn off the heat, and then cover the pot. Let the spinach cook using the remaining heat in the pot and Serve Hot and Enjoy!

Sisig For Appetizer



I think I would share this recipe. It is our popular and favorite appetizer (pulutan) and now turned to main dish that came from the Culinary Capital of The Philippines.But if you are eating Pork Sisig, watch out if you have high cholesterol. 

Sisig is usually refers to unripe fruits that is sometimes dipped in salt and vinegar. It is a kapamapangan term which means "Something Sour To Snack On." Kapampangan is one of the major languages in the Philippines.

Sisig also refers to the way of preparing fish and meat. Which is marinated with lemon juice or vinegar and then seasoned with pepper, salt and other spices to taste. 

You can also buy cooked sisig from other restaurant or other fast food chains. Or at the Groceries, ready to eat and you just have to heat it.

However, ofcourse, Homemade is always the best. You will see them having this mostly during birthday parties and other drinking session here in the Philippines.

Let me share you the recipe, you might want to try this doing at home or on your next drinking session with you friends or maybe cook it for dinner next time.



Ingredients:

2 lbs pig ears
1/2 lb pork belly
1/4 lb chicken liver
1 cup onion, minced
3 tbsp soy sauce
3 tbsp chili
3 pieces calamansi
1/2 cup margarine 
3/4 ounces water
2 tbsp mayonnaise
  Salt and ground black pepper to taste

Cooking Procedure:

Pour the water in a pan and bring to a boil,then add salt and pepper

And then Put-in the pig’s ears and pork belly then simmer for 40 to 50 minutes or until it is tender

Remove the boiled Pig's ears and post belly from the pot then drain excess water

Grill the boiled pig ears and pork belly until done

Then Chop the pig ears and pork belly into fine pieces.

Next: 

Melt the butter then add the onions in a pan. Cook onions and add the chicken liver and cook until well done.

Then crushed the chicken liver while it is being cooked in the pan
You then add the chopped pig ears and pork belly then cook for 10 to 15 minutes.

Put soy sauce and chili then mix very well

Then add salt and pepper to taste

Finally put in the mayonnaise and mix with the other ingredients.

Serve While Hot and Put Lemon or Calamansi Before Eating It.

SeaFood Salpicao On Your Table


                

How was your weekend? Mine was good and part of it I spend sleeping,haha. But i got the chance to attend a birthday party. It was good and did lots of catching up together with the other friends there.

And what i notice on the table is their yummy looking Salpicao. So I decided to list down the ingredients and share with all of you. It is a Sea Food Salpicao.

This is very easy to make.

Ingredients:

2 tbsp butter
Knorr Chicken or Fish Broth Cube
2 tbsp garlic, minced
4 tbsp onion, sliced
4 tbsp celery, sliced
4 tbsp bell pepper, sliced
1/4 kg squid, cleaned & sliced into rings
1/4 kg shrimp, peeled
1/2 kg fish fillet, sliced
1/2 kg mussels (removed from shell)
3 tbsp Lady's Choice Tuna Spread

For others, they dont peel the shrimp or remove the mussels shell, but for this one it was removed and peeled. So everything is really ready to eat.

Cooking Procedure:

Saute vegetables in butter.

The Add seafood.

Add Knorr Chicken or Fish Broth Cube and half a cup of water.

Continue cooking on high fire until all seafood pieces are completely cooked.

Turn heat off and gently toss in Lady's Choice Tuna Spread.

This is how it was break down and It did taste good, everybody there loves it.

Try it on your gatherings or even for family dinner, I am sure you will all enjoy it.

Maja Blanca for Dessert



Here is for dessert, the sweetest and yummy taste of Maja Blanca for dessert. This is one of the dessert they prepared at the Birthday Party.

Maja Blanca (Coconut Milk Pudding)

Ingredients:

4 cups coconut milk
3/4 cup cornstarch
14 ounces condensed milk
3/4 cup fresh milk
3/4 cup granulated sugar
1 can whole sweet kernel corn
5 tbsp toasted grated coconut

Cooking Procedure:

Pour the coconut milk in a cooking pot and let it boil

Then Add the sugar, condensed milk, and whole sweet kernel corn then stir until all the ingredients are evenly distributed. Keep stirring.

Simmer for 10 minutes

Combine the fresh milk and cornstarch then whisk until the cornstarch is diluted

And then Pour the fresh milk and cornstarch mixture in the cooking pot and stir thoroughly.

Allow to cook while stirring until it reaches your desired thickness

When cooked, Pour the mixture in a serving tray then arrange and flatten using wooden spatula
