What makes Holidays more exciting just like Christmas and New Year is the Dessert we get to taste and although the preparation maybe different but still the yummy outcome is always there.

We did rice cake, leche flan and Ube Jam last night and i got the chance to do the Ube Jam and had fun doing it.

Ingredients:

2 kilos ube yam root (4.5 lbs) or powdered ube (purple yam can found in filipino store)
2 cans (28 ounces) condensed milk
2 cups butter or margarine
2 teaspoon of vanilla extract
5 cups of fresh coconut milk
3 cups of brown sugar
2 cups of fresh grated coconut meat (separate preparation, see below)


Instructions

Wash the Ube thoroughly to remove the dirt.  Submerge them in water in a deep pot.  Boil until soft.  Drain and let it cool.  Peel the boiled ube yam.  Grate finely and mashed them.  Heat a deep pan and melt butter or margarine.  Add grated Ube .   Keep mixing to prevent the Ube from sticking to the bottom of the pan.  Add condense milk and coconut milk.  Keep stirring.  Add vanilla extract. Keep stirring.  Remove from heat and set it in a deep dish.  Smooth the top with a spatula.  Sprinkle the top with the brown coconut meat (see below how to prepare this).  Cut into squares and serve.

How to prepare coconut sprinkles

Heat pan in high heat.  Add fresh, grated coconut meat.  Let it simmer until it turns brown while occasionally stirring to keep it from burning.  The white, grated coconut milk when it turns deep drown will shrivel to tiny clumps while releasing oil.  This means, it is done.  Drain the oil.  Sprinkle the brown coconut on top of the Ube pudding.


Place on well oiled or buttered 3-cup mold. Chill until ready to serve. Unmold on a platter just before serving.

To make it easier, I did check on google for a step by step on how to do it to share with everyone. It did come out really good and the taster said it did taste good and we all enjoyed it.

I would recommend this , although it takes time to do it and the mixing while cooking it takes longer, depend on how much you prepare, still worth the time doing it.

What Are Your Preparation for New Year?

I am pretty sure everybody is busy preparing for New Year. We all want to end up 2012 in a good way and start 2013 in a more positive and fresh start. Counting the hours....

What Are Your Preparation for New Year? Aside from preparing food and getting busy cooking....

This is also a perfect time for Family Reunion or Get Together, so everybody stay close the whole year through. Most would like to end the year with fire works and end it with big bang, which they hope would bring them more blessings and a Happy New Year.

I went to the Supermarket with my Mom and everybody is rushing in buying stuff they would need for the prepation of the new year. Some stocks are almost gone or sold out, the sales lady look tired already but still looking excited about the holiday. That is what they call the Spirit of the holiday. Although not everybody can really be friendly but if they cant, I am sure you can. Don't let there moods spoil your day.....

Oh well, we just bought few stuff...Im going to make Leche Plan, Rice Cake and my Mom will cook Caldereta and will do some barbeque with the family too.

Oooops heavy traffic, the traffic is more frustrating than falling inline to pay for the groceries.....And the fireworks store are everywhere, next to each other actually. But it is better to be safe in buying this stuff... We can celebrate and Enjoy New Year without getting hurt from lighting a fireworks, there are some who are highly recommended to use, be safe and still have fun.


I am looking forward for 2013 even though not really sure what to expect, except that i know it will be a busy year. And I am hoping that the dollar exchange will not go down as low as 32 pesos for $1 or that would be really be frustrating, not just for me but I am sure for those overseas worker as well, who are earning or paid US dollars. It will not be a good news for their Family,I am from the Philippines. Oh well, I sure hope there is another news that could light up the spirit of New Year, anyways that is just a prediction but I am sure it is base on something and i heard it before as well....So watch out for that and I will hope for the best for everyone!


Ok lets stay positive....It's 2013, maybe something good will happen, more work probably and as long everybody is healthy right...

Ok I know everybody is really busy now and about to go crazy here as well and having random thoughts ....hard to focus when getting crowded...Just wanted to say something before the year end!

Day Before Christmas and The Spirit Of The Holiday!

Christmas comes every year but it never fail to excite me. And its the time of  year again and few more days it will be Christmas again....

First, Putting up the Christmas tree is a must for those who can but for those who cant, just decorating your home with anything that will light up your place is good enough. Anyways, happines is not always seens on material things, it is felt in the heart. Just enjoy the things you have and share your blessings with someone, with your family. 


There are early shoppers to go shopping even early as September and there are who likes to shop and look around first then go for Christmas rush, where everybody gets really busy, the traffic, crowded places and even the long lines just to pay for few stuff that you bought, but still that is the fun of it. The feeling is Christmas Just around the corner.

Most of us wait for the midnight sale for reason we get to save and diffrent stuff are out for us to purchase and to choose from. And even they sell it for lesser price, sometimes we find the good one. Just patient my dea, go around, look around, there are really many to choose from.

Some people are really good in budgeting and they know where to go to in buying Christmas gift.

Making list who to buy gifts or no list at all and just go buy it, whatever it takes you and your budget ofcourse.

Mmmm speaking of budget....The hard earned money, the 13th month pay and the bonus, the really tight budget which you really need to consider before buying what you want to buy.

Things i usually consider are:

Do I really need it for Christmas ( there i check and sometimes we have it already)

In giving gifts, better to make a list, so as not to double purchase coz sometimes ( admit it or not) we do. Too much to think about, the preparation and all that, that instead of enjoying our shopping for holidays, it becomes stressful.

What to prepare or cook for Christmas? This will save us time to pick up the things we need when we are already in the market or grocery store. Especially if you are doing it day before Christmas.

The fun of it is doing things like cooking, the preparation with the family. Just really perfect time for bonding. It is really the time of year when everyone is dear....Then lets all Sing Christmas Carols, Sing all the way!

No matter what you do and how busy you are and busy you can get, never forget the spirit of Christmas, Giving,Sharing and forgiving and just make sure you enjoy the Holiday and your Christmas Vacation!

Feelings and Emotions

I came across a post that I find really interesting and I would like to share. The title is Helpless Love. Mixed emotions and thoughts came over me, but then again hard to explain in just one words coz when you talk about emotions, words seems so endless. Just keep on reading and it will be worth it.....




Once upon a time all feelings and emotions went to a coastal island for a vacation. According to their nature, each was having a good time. Suddenly, a warning of an impending storm was announced and everyone was advised to evacuate the island.

The announcement caused sudden panic. All rushed to their boats. Even damaged boats were quickly repaired and commissioned for duty.

Yet, Love did not wish to flee quickly. There was so much to do. But as the clouds darkened, Love realised it was time to leave. Alas, there were no boats to spare. Love looked around with hope.

Just then Prosperity passed by in a luxurious boat. Love shouted, “Prosperity, could you please take me in your boat?”

“No,” replied Prosperity, “my boat is full of precious possessions, gold and silver. There is no place for you.”

A little later Vanity came by in a beautiful boat. Again Love shouted, “Could you help me, Vanity? I am stranded and need a lift. Please take me with you.”

Vanity responded haughtily, “No, I cannot take you with me. My boat will get soiled with your muddy feet.”

Sorrow passed by after some time. Again, Love asked for help. But it was to no avail. “No, I cannot take you with me. I am so sad. I want to be by myself.”

When Happiness passed by a few minutes later, Love again called for help. But Happiness was so happy that it did not look around, hardly concerned about anyone.

Love was growing restless and dejected. Just then somebody called out, “Come Love, I will take you with me.” Love did not know who was being so magnanimous, but jumped on to the boat, greatly relieved that she would reach a safe place.

On getting off the boat, Love met Knowledge. Puzzled, Love inquired, “Knowledge, do you know who so generously gave me a lift just when no one else wished to help?”

Knowledge smiled, “Oh, that was Time.”

“And why would Time stop to pick me and take me to safety?” Love wondered.

Knowledge smiled with deep wisdom and replied, “Because only Time knows your true greatness and what you are capable of. Only Love can bring peace and great happiness in this world.”

“The important message is that when we are prosperous, we overlook love. When we feel important, we forget love. Even in happiness and sorrow we forget love. Only with time do we realize the importance of love. Why wait that long? Why not make love a part of your life today?”

I  saw this image on Firmoo Online Optical Store fan page and really caught my eyes.  Maybe 12-12-12 is really a lucky day and i heard it is also lucky day for getting married. I wonder if  it is really true or its all in the mind and we get lucky because we work for it. Oh well whatever the belief is...Hope we all get lucky...oh by the way, i do believe in Luck and Love!

And yes Miracles do happen and we see it everyday, we just have to keep our heart open and there are even Angels and Blessing In Disguise!
